The ultimate fridge-raid sandwich. Rogan josh spiced lamb or chicken, melted cheddar, mango chutney - pressed between two slices of sourdough until golden.

INGREDIENTS

1/2 pouch Holy Cow! Kashmir Rogan Josh,

150g leftover cooked lamb or chicken, shredded,

4 slices sourdough bread,

60g mature cheddar, grated,

2 tbsp mango chutney,

Butter for spreading

method

1. Heat the filling: Combine the shredded lamb or chicken with the Holy Cow! Kashmir Rogan Josh sauce in a small pan. Warm through over medium heat for 2-3 minutes.

2. Assemble: Spread butter on the outside of each bread slice. On the inside, spread mango chutney on two slices. Pile the spiced meat onto the chutney slices and top with grated cheddar.

3. Press and grill: Place the sandwiches in a hot dry frying pan or sandwich press. Cook for 2-3 minutes each side until golden and the cheese has melted.

4. Serve: Cut diagonally and serve immediately.

Tip: No leftover lamb? Use a tin of chickpeas warmed in the rogan josh sauce for a great vegan version.
