Sourdough or ciabatta spread with malabar sauce, garlic butter and fresh coriander, grilled until golden and irresistible. The unexpected side dish that steals the show.

Serves 4-6
1/2 pouch Holy Cow! Mangalore Malabar,
1 large sourdough loaf or ciabatta,
60g butter, softened,
3 cloves garlic, minced,
Small bunch fresh coriander,
roughly chopped,
30g parmesan, grated (optional)
1. Mix the butter: Combine the softened butter with the minced garlic and half the chopped coriander. Mix until smooth.
2. Slice the bread: Slice the sourdough or ciabatta horizontally. Score the cut face in a crosshatch pattern without cutting all the way through.
3. Spread: Spread the Holy Cow! Mangalore Malabar sauce over the cut surface, followed by the garlic herb butter. Press into the scored cuts.
4. Grill: Sprinkle with parmesan if using. Grill under a hot grill for 4-5 minutes until golden and bubbling.
5. Serve: Scatter with the remaining fresh coriander. Slice and serve immediately while warm.
Tip: This also works brilliantly on the BBQ - wrap in foil and cook on the grill for 10 minutes.
