Cauliflower & Chickpea Vegetable Tikka Masala Curry

INGREDIENTS

1 tsp of oil

120g cauliflower florets

120g chickpeas

1 / 2 sliced green pepper

250g Holy Cow! Delhi Tikka Masala Curry Sauce

50ml (vegan) cream

1 spring onion & 1 red chilli (optional)



method

1.     Heat the olive oil in a large saucepan.

2.     Add the cauliflower florets & chickpeas to the pan and sauté for 4-5 minutes.

3.     Add the peppers and cook for 2-3 minutes.

4.     Add Holy Cow! Delhi Tikka Masala Curry Sauce stir and cook for another 2 minutes.

5.     Meanwhile microwave rice.

6.     Garnish with chopped spring onions, chilli & cream. Serve with pilau rice or naan (& cold apple cider!)
