Lamb chops or leg steaks marinated in rogan josh, grilled over coals until beautifully charred. Serve with flatbreads, mint yoghurt and a mountain of fresh herbs.

Serves 4
1 pouch Holy Cow! Kashmir Rogan Josh,
8 lamb chops or 4 lamb leg steaks,
2 tbsp natural yoghurt,
Flatbreads to serve,
Mint yoghurt to serve,
Red onion and lemon to serve
1. Marinate the lamb: Mix the Holy Cow! Kashmir Rogan Josh with yoghurt. Coat the lamb chops thoroughly, cover and marinate for at least 2 hours - overnight is even better.
2. Prepare the BBQ: Get your BBQ to high heat with direct coals or preheat a griddle pan until smoking hot.
3. Grill the lamb: Cook the chops for 3-4 minutes each side for medium, or 5 minutes for well done. The marinade should char slightly at the edges.
4. Rest: Rest the lamb for 5 minutes before serving - this is non-negotiable.
5. Serve: Serve with warm flatbreads, mint yoghurt, sliced red onion and lemon wedges.
Tip: This marinade also works brilliantly on lamb shoulder for a slow cook - 4 hours at 160°C until falling apart.
