
Light, fresh and completely moreish. Spiced lamb or chickpeas in rogan josh, served in crisp little gem lettuce cups with raita and pomegranate. The sharing starter that disappears instantly.

Serves 4-6
1 pouch Holy Cow! Kashmir Rogan Josh,
400g lamb mince or 1 tin chickpeas, drained,
2 little gem lettuces, leaves separated,
4 tbsp natural yoghurt,
1/2 cucumber, finely diced (for raita),
Small bunch fresh mint,
Seeds of 1/2 pomegranate
1 tsp olive oil
1. Make the raita: Combine the yoghurt, diced cucumber and roughly chopped mint. Season and set aside.
2. Cook the filling: Heat olive oil in a pan. If using lamb mince, brown for 4-5 minutes, breaking up as it cooks. If using chickpeas, add straight to the pan.
3. Add the sauce: Pour in the Holy Cow! Kashmir Rogan Josh and stir through. Simmer for 5 minutes until the sauce is thick and the filling is well coated.
4. Assemble: Arrange the lettuce cups on a large platter. Spoon the filling into each cup.
5. Garnish: Drizzle with raita, scatter with pomegranate seeds and fresh mint leaves.
Tip: These can be assembled 30 minutes ahead - just keep the filling warm and add the raita at the last moment.
