Crispy fries piled high with tikka chicken, red onion, yoghurt, mango chutney and fresh coriander. This is Friday night done properly.
Prep: 5 mins | Cook: 20 mins | Total: 20 mins
Serves 2-3
1 pouch Holy Cow! Delhi Tikka Masala,
2 chicken breasts, diced,
500g oven fries or skin-on chips (fresh or frozen),
1/2 red onion, finely sliced,
4 tbsp natural yoghurt,
2 tbsp mango chutney,
Small bunch fresh coriander,
1 lime, cut into wedges
1 tsp olive oil
1. Cook the fries: Cook the fries according to pack instructions - oven or air fryer both work perfectly.
2. Cook the chicken: While the fries cook, heat olive oil in a pan over medium-high heat. Add diced chicken and sauté for 3-4 minutes until sealed.
3. Add the sauce: Pour in the Holy Cow! Delhi Tikka Masala sauce. Simmer for 6-7 minutes until the chicken is cooked through and the sauce is thick and glossy.
4. Load the fries: Pile the fries onto a large serving board or tray. Spoon the tikka chicken generously over the top.
5. Add the toppings: Scatter with sliced red onion. Drizzle with yoghurt and mango chutney. Finish with fresh coriander and a squeeze of lime.
Tip: For extra indulgence, scatter with crumbled paneer or a handful of crispy fried onions.
