1 tsp of oil
100g chicken thighs
50g butternut squash
50g sweet potato
20g coconut cream

2 x spring onions for garnishing (optional)
1. Heat the olive oil in a large saucepan.
2. Fry 100g chicken thigh for 2-3 minutes.
3. Cut the butternut squash & sweet potato into bite-size chunks and sauté in the pan for 2-3 minutes.
4 Add Holy Cow! Mangalore Malabar Curry Sauce and the coconut cream. Stir and cook for another 6-7 minutes.
5. Garnish with chopped spring onions. Serve with rice or naan (& a beer!)
